butterscotch brownies

 

but make it gluten, dairy and nut free

these are basically blondies but cut into small bite-size pieces covered in powdered sugar! this is a family recipe and a new favorite. we ended up having to make two batches last year at christmas because they were SO good.

as far as what you’ll need to make this, a hand mixer or a stand mixer with a paddle hook will be great.

ingredients

1/2 cup margarine — i used Earth Balance *

2 eggs

2 cups brown sugar

1 1/8 cups of cassava flour — i used Otto’s but any brand should work**

3/8 cups of brown rice flour**

1/4 tsp salt

1 tsp vanilla

*for dairy lovers, use real butter

** for gluten lovers, use 1 1/2 cups of all-purpose flour total. or for those who have your own blend of gluten-free flours

 

instructions

  1. turn oven on to 350 degrees

  2. cream sugar and margarine together. there should not be any chunks of butter in your mixture

  3. beat eggs and mix throughly with creamed mixture

  4. add vanilla.

  5. sift in your dry ingredients and mix.

  6. grease a 9” square pan and pour mixture in.

  7. Bake at 350 for 35-40 minutes

  8. Let it cool slightly, and cut into squares. Makes about 16 brownies.

  9. Roll or sprinkle with powdered sugar
